Try this tip I got from an old army cook many years ago:
Before frying the bread, moisten the crust around the sides of the slice, and also slightly dampen both surfaces before frying. Try it! You'll like it!! and I think it prevents the bread from getting too saturated with the fat/oil, etc..Cheers:PDT11.
