Happy Turkey day to all US of A mates. I am not sure if it's tomorrow or Thursday. So I will get in first with my prezzie.

I am not keen on Turkey so here is a special prezzie from the 'Land of Scouse.'

Sweet Potato Casserole (Superb for Vegetarians and so easy to make.)


A sweet potato casserole recipe, made with mashed sweet potatoes and a crunchy pecan topping.


Ingredients

* 3 cups mashed sweet potatoes
* 1 cup brown sugar
* 2 eggs, lightly beaten
* 1 teaspoon vanilla
* 1/2 cup milk
* 1/2 cup melted butter
* .
* Topping:
* 1/2 cup brown sugar
* 1/3 cup flour
* 1/3 cup melted butter
* 1 cup chopped pecans

PREPARATION:
Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned.
Serves 6 to 8.

Hi Steven

Many thanks. It's actually Thursday. Donna, myself and me Mum don't like turkey much either but Donna and I will be taking Mum to a restaurant in Baltimore's Inner Harbor. I suspect we will probably all have fish. :)

I didn't know Thanksgiving day was 22nd Nov. Same day as JFK assassination.

I always thought Thanksgiving was near the end of the month - 28th.

Aye, Lindy, the only thing that's fixed is that it must be on a Thursday. It's nice for us working folk because we get a four-day weekend. :) We had a bit of a too-do though last evening when I could not start our car -- we were to drive downtown to pick up my Mum to take her to an Inner Harbor restaurant. So we ended up doing it by cab, with Mum's wheelchair going in the boot of the cab and Mum riding up front. It worked well enough even though it was blowing a gale and my Mum's hat blew off as soon I got her outside to get her in the cab! Luckily, the car did start this morning and I managed to get it to the Saturn dealership to get a new battery.

I didn't know it had to be on a Thursday and the date changes.

It's like Easter then - not a fixed date.

Hope you have enjoyed it anyway. :)

It is one terrific holiday. I wish we celebrated Thanksgiving in one form or another over here. You can stuff your Halloween and other imports, but Thanksgiving is brilliant. The feast of great food, all your family and friends who live far away come home from abraod, American football, etc. It really is a nice occasion.

MariaC, you're kidding right...? The word stuffed was chosen by me because it is synonomous with stuffing a Thanksgiving turkey, not for any nefarious thoughts you might be thinking.:034::002:
