And I need some help! Does anyone know of a piece of software that I can use that will show me the layout of the book that I want (i.e. square page - I need to drag and drop things where they would be laid out on the page.

Word is great for doing a basic 'what I need' but is poo for everything else!

Anyone any suggestions?

I think you'll find publishers will have specific formats for things, and will probably have to change the typesetting (margins, images, etc) to suit the media. Might be best looking for a guide on it. Still, for drafting it out Word should do everything you need.
